LEMON CURD SHORT BREAD RECIPE
Warm and rich pudding
INGREDIENTS
- 8 Lemons juiced
- 2 Lemon zest
- 1/3 Olive oil
- 4 tbsp Butter
- 1 cup Powdered sugar
- 2 Eggs whole
- 3 egg yolks
- Pinch of salt
- For the Shortbread
- 125 gm Maida(All Purpose Flour)
- 1 tsp Baking powder
- 45 gm sugar
- 20 gm Sugar powdered
- 10 tbsp Butter
- Pinch Coarse sea salt
INSTRUCTIONS
- Mix ingredients in a bowl.
- Grease spring baking tin 8″
- Add the dough and press gently with palms and bake in pre-heated oven at 170 deg for 20 till pale brown
- Whisk eggs for curd.
- Mix in all ingredients and mix well, in a low heat bring mixture to a boil and remove quickly.
- Pour lemon curd on shortbread and bake for 10 mins.
- Remove and bring to room temperature.
- Refrigerate and serve chilled.
