RUBY COUSCOUS RECIPE
INGREDIENTS
- 1 cup Couscous
- 1 Beetroot
- 3 tbsp Feta cheese
- 3 tbsp Parsley
- 1 Onion
- 1/2 cup Corn kernels
- 2 tsp Black pepper
- Slat to taste
- 2 tsp Fresh lemon juice
- 1 tsp Mustard powder
INSTRUCTIONS
- Soak the couscous in a warm water for 30mins.
- Drain and set aside.
- In a pan caramelise onions with 1tsp olive oil and 1tsp brown sugar.
- Make a puree out of the par boiled beetroot.
- Add the puree to the pan along with other ingredients except for the parsley and feta.
- Remove from the pan and pour in a serving dish.
- Garnish with feta and parsley.
