I fondly remember my Granny making bajra roti with white butter and turnip pickle and feeding us during winters
Not only these are tasty but very healthy and nutritious .In Gujrat also the version is called Bajra chamchamiya or pearl millet pancakes made with fresh green fenugreek , curd and coriander and spices .
So lets get started with a delicious treat.
Bajra chamchamiya ! a winter treat
INGREDIENTS
- 1 cup pearl millet ground
- 1/2 cup Yoghurt- hung whisked
- 1/2 cup fresh green fenugreek
- 1/4 cup green garlic
- 1/4 cup chopped coriander
- 1/2 tsp Turmeric powder
- 2 tsp salt
- 1 tsp White sesame seeds
- 1/2 tso Ajwain/carom seeds
- 1 tsp Asaefotida
- 1 tbdp Ginger garlic paste
- 1 tsp Baking soda
- 1 tsp Chopped garlic
INSTRUCTIONS
- In a pan add millet flour and mix with yogurt and add spices
2. mix in chopped green fenugreek , coriander and all spices along with ginger garlic and ginger garlic paste
3. add baking soda
4. heat the pancake or omlette pan add little olive oil and pour the batter sprinkle sesame seeds cook 3-4 minutes on each side
5. serve with pickle and lassi
